Birch Polypore (Fomitopsis betulina) is a bracket fungus that grows on birch trees across northern forests and has a long history of traditional use in European folk herbalism. It is one of the oldest documented botanicals — famously found among the belongings of Ötzi the Iceman. Traditionally used for its antiviral properties and as a general immune tonic, it is earthy and distinctly bitter, typically prepared as a decoction rather than a standard steep, and is used by those with an interest in functional mushrooms and traditional forest botanicals.
How to Prepare: Use 1 tablespoon of mushroom pieces per cup of water. Bring to a boil, reduce heat, and simmer for 10 minutes. Strain and drink immediately or refrigerate. Note: this brew is bitter by nature.
